Easy Breakfast Egg Sandwich


When your kids are old enough to help themselves in the kitchen, it helps you out too, right? I recently showed my soon to be 11 yr old little boy how to make microwaved egg sandwiches. He's been making these quite often since!



Easy Breakfast Egg Sandwich
1 large egg
1 slice of ham
1 good pinch of cheese
Splash of milk
1 english muffin
Large enough mug, non stick spray, microwave, toaster

Toast english muffin, while toasting make the egg.
In a large mug (preferably one that'll fit the size of the english muffin), spray with non stick spray, add egg and a tiny splash of milk, mix.
Microwave for 1 minute.
Add pinch of cheese and ham, microwave for 30 seconds more.
Top with 1 piece of english muffin and invert onto a plate, top with 2nd piece of english muffin. Enjoy!

Ingredients ready to go!

He's making this by himself while I coach him.

Spray your mug, it's no fun to clean otherwise!

Get toasting your muffin while your egg cooks.

Break your egg into the mug (this old soup mug fits the muffin nicely!)...

add a tiny bit of milk...

whip it up!

nuke it...

for 1 minute!

It becomes nice and fluffy!

Add some cheese...

and then the ham (we used 2 thinly sliced slices)...

nuke it for 30 more seconds...

top with 1 english muffin piece...

invert onto a plate...

and it'll all stack up...

top with last piece of english muffin...

and enjoy!

Layered Jello Knox Blocks


For the 3rd grade St. Patrick's Day class party I offered to bring in green jello. But not just jello. Knox Blocks. Who remembers them as a kid? I do, and loved them. They are sturdier than the jello jigglers you may know of these days. This time I thought I'd try them with a cream layer in them. I call them Magical Shamrocks. They are the easiest thing to make, and they set up pretty quickly, but I kept mine overnight. Just think of the different flavors and shapes you could make these into. Raspberry, strawberry or cherry hearts for Valentines, grape, lime or strawberry for Easter eggs, cherry or lime for Christmas time...

As I was cutting these out the next morning, I kept catching myself nibbling on the scraps, oooh they were good. I am not crazy about that  gelatin stuff, but these were good. My kids loved them. I don't know how they went over at school, since my little girl was sick the day of her party, but most of what I sent was gone when I got the dish back.
You  may want to double this for a class of 24+ if you use 2-3" cutters.

Layered Jello Knox Blocks
from Group Recipes

4 envelopes Knox unflavored gelatin
3 pkgs (3oz) Lime Jello
3 Cups boiling water
1/2 pt whipping cream

In large heatproof bowl mix unflavored gelatin with Jello.
Add boiling water and stir until gelatin is completely dissolved -- about a minute or so.
Stir in whipping cream.
Pour into a 13x9 inch pan, cover and chill until firm, about four hours or overnight.
The cream will rise during chilling to form a top layer.
To serve, cut into squares or rectangles of desired cookie cutter shapes and size for finger food treats. Place each piece between cut wax paper, and keep chilled until serving.

Bento Box Lunches

This year I decided to make Bento Box lunches for our 3rd grader. I thought the fun foods would entice her to EAT all her lunch! But when she doesn't, that PackIt lunch bag keeps it nice and cool to snack on the way home. If you search Bento Box lunches you may find some really fancy ones, like making scenes or characters from the food. Well, I'm not getting that crafty with foods, just simple little finger foods in cute compartments.
Here are some photos of some of the lunches I have packed. It may look like a lot of food, but really it's just like a pinch of each thing. Maybe they'll give you an idea of what you can pack for your bento box.

{How to make the egg mold, click here for a how-to video, fwd to 1:53. Basically use a boiled egg, coled and peeled then place in a mold and into fridge for about 5 minutes, but I just do mine overnight}

{great tip: use Glad Press'n seal to cover those messy items such as juicy pickles, pudding, applesauce, etc...don't forget to pack a spoon or fork}

sometimes I secure the lunch box with a rubber band, the press'n seal won't give the lid a tight close
