Veggie Burgers

Here is another great vegan recipe I found for our daughter who is trying Vegan. I've been making her recipes that will last throughout the week so she always has something and it's less stress on me to make her a separate meal. Being vegan is hard! Kudos to any of you out there! Hey if anyone has favorite vegan recipes you'd like to share with me I'd love to see them!

I had seen this Bean and Zucchini burger recipe on pinterest before (that ahh-mazing photo!) and decided to give it a go. It's a pretty simple recipe and although I did not make this gluten free (I was afraid if I did, I'd eat all of her burgers lol) you certainly could. I also just realized her recipe calls for kidney beans, I don't know where I got garbanzo beans from, but that's what I bought. They worked great!

I had forgotten to get zucchini at the store but I had frozen shredded in the freezer already so I thawed that and used it. I also added in some shredded carrot and more seasonings. Let me tell you, these smelled amazing while cooking, I kept sticking my nose into the pan, lol.

Veggie Burgers
adapted from Vegan Sandra

30 oz can garbanzo beans, drained
1 white onion, finely diced
2-3 medium zucchini, diced or shredded
1 large carrot, shredded
3 tsp curry powder
1 TBL chopped garlic
salt and pepper to taste
3 tsp vegetable stock powder (I crumbled 1 GF veggie bouillon cube)
3/4 cup wheat flour (OR gluten free flour)
oil for frying

Drain and rinse the beans, put them to a bigger bowl and mash them with a potato smasher. Add onions, zucchini carrot, along with curry powder, garlic, salt and pepper, vegetable stock powder and whole-wheat flour. Mix carefully with your hands or with a fork. Shape into desired sized patties (I used my burger shaper and got 7 regular sized patties). Heat about 2 TBL of oil in a large skillet and fry them until crispy on both sides (about 6 mins/side). Keep warm in oven as you cook the rest.

load these up on your favorite buns or lettuce wraps with your favorite accompaniments

these patties develop a crispy exterior with a soft center.

Grilled Ham and Cheese Chicken Burgers with Roasted Potato Fries

Winner winner chicken dinner! I came across these burgers and decided to give them a go, such easy ingredients! Since these are soft tender patties, I chilled mine for a few hours to help them firm up (could also freeze them) and cooked them on my grill grate tray thing (see photo) so they'd hold up a little better. The ham and parmesan cheeses were really good in these. We all enjoyed them and will definitely keep in our files.

Grilled Ham and Cheese Chicken Burgers
slightly adapted from Smoked 'n Grilled

1 lb. ground chicken breast
1/2 cup cooked diced ham
2/3 cup Parmesan/Asiago cheese (shredded)
Salt & pepper to taste

Mix all the ingredients together and form into 4 patties. Cover and chill for a few hours. Cook over a medium hot grill until just cooked through. About 8 to 10 minutes.

Add your favorite toppings and buns (we used lettuce, tomato, red onion, mayo and white american cheese).

grilling!

I made myself gluten free buns (they're really flat but were great)

For the fries, I sliced Yukon gold potatoes in half lengthwise, tossed with a little oil, salt and pepper. Roasted in a 425' oven on a parchment lined baking sheet, cut side down for about 40 mins. They'll have crispy outsides and fluffy insides. My fave!

Fajita Turkey Burgers {Gluten Free}

Here's a great twist on a plain turkey burger. Amp it up by making them into Fajita Burgers. Topped with a tomatillo salsa gives them that "Oooh!" factor, and Mr. raved about them. I've added my gluten free changes to the ingredients. As for the finely chopped veggies, I just threw them in my food processor. These are much too soft to grill so a hot pan works great.

Fajita Turkey Burgers {Gluten Free}
adapted from Maureen Callahan, Cooking Light July 2006

1/4 cup bottled tomatillo salsa
2 tablespoons chopped avocado (I used smashed avocado)
1 tablespoon chopped fresh cilantro
2 (1-ounce) slices white bread (I used my gluten free bread)
Cooking spray
1/2 cup finely chopped onion
1/2 cup finely chopped red bell pepper
1/2 cup finely chopped green bell pepper
2 teaspoons fajita seasoning, divided (I used Amazing Taste it's gluten free)
1/4 teaspoon salt, divided
1 tablespoon tomato paste
1 pound ground turkey breast
1 egg white
4 (1 1/2-ounce) whole wheat hamburger buns, toasted (I used gluten free buns for mine)

Preparation
Combine tomatillo salsa, chopped avocado, and cilantro; set aside.
Place bread in a food processor; pulse 10 times or until crumbs measure 1 cup.
Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add onion and bell peppers; sauté 5 minutes or until tender. Stir in 1/2 teaspoon fajita seasoning and 1/8 teaspoon salt. Cool.
Combine breadcrumbs, onion mixture, remaining 1 1/2 teaspoons fajita seasoning, remaining 1/8 teaspoon salt, tomato paste, turkey, and egg white in a large bowl. Using damp hands, divide turkey mixture into 4 equal portions, shaping each into a 3/4-inch-thick patty. Heat pan over medium heat. Recoat pan with cooking spray. Add patties; cook 4 minutes on each side or until done. Place 1 patty on bottom half of each bun. Top each serving with 1 1/2 tablespoons salsa mixture; top with remaining halves of buns.
