Avocado Chocolate Pudding
WHAT?? you say! Avocado pudding? Yep! It's good, I promise. I did not tell my family what was in it even though they love avocados, they just knew it was creamy, silky, rich and chocolatey. In fact they couldn't finish their serving it was "very chocolaty" they say lol. I loved it, and have made it a couple times since for my chocolate cravings.
Avocado Chocolate Pudding
slightly adapted from Seeded At The Table
2 ripe medium avocados, peeled and chopped
1/3 cup cocoa powder
1/4 cup honey
3/4 cup canned coconut milk + more if desired
1 1/2 teaspoon vanilla extract
Blend all ingredients, until smooth, in a food processor. May add more coconut milk for desired consistency. Chill for a few hours then serve.
Makes about 2 cups, 1/2 cup serving size.
Please share this post if you liked it. =)
enjoy,

I am not an avocado fan unless they are in smoothies, so I am DEFINITELY giving this a try, looks delicious!
ReplyDeleteI will have to try this! I love avocado!
ReplyDeleteDef gonna try it this week, thanks Rachelle.
ReplyDeleteI could only find boxed coconut milk, is that fine? Or by canned were you referring to a sweetened condensed kind? Thanks!
ReplyDeleteHi missmeliscious,
ReplyDeleteI use this one, it's usually located in the Asian aisle. There are different brands as well. I'm not sure about the boxed coconut milk. The canned milk is kind of thick and creamy.

Just now saw your reply! Silly Internet ;) thank you for the response!
DeleteI'm wondering if almond milk can replace coconut milk? And if a blender will work instead of a food processor??? Thoughts??? I'm trying to make do with what I have on hand.
ReplyDeleteHi Hannah, Yes I am sure that'll work just fine! Enjoy! :)
