Ultimate Chicken Fingers (Gluten Free)


These were part of my blog review & giveaway, I used the gluten free Bisquick mix to coat these. We all enjoyed these chicken tenders, and I think you will too!


Ultimate Chicken Fingers (Gluten Free)
adapted from Bisquick

3/4 cup Bisquick® Gluten Free mix
1/2 cup grated Parmesan cheese
1 teaspoon paprika
1/2 teaspoon salt
1/2 tsp garlic powder
3 boneless skinless chicken breasts (1 lb), cut crosswise into 1/2-inch strips (or 8 tenders)
2 eggs, slightly beaten
Cooking spray
1. Heat oven to 450°F. Line cookie sheet with foil or parchment paper; spray with cooking spray.
2. Stir Bisquick mix, cheese, paprika and salt in shallow baking dish. Dip chicken strips into eggs, then coat with Bisquick mixture; repeat with other pieces, dipping in eggs and Bisquick mixture two times each. Place chicken on cookie sheet. Spray chicken with cooking spray.
3. Bake 12 to14 minutes, turning after 6 minutes, until no longer pink in center.

  2. Don't be fooled....it's the recipe that's on the back of the Bisquick box. Other than "gluten free", this is not an original recipe.

  3. I don't think she's trying to fool anybody...she didn't say "I just invented an awesome brand new recipe", anyway they sound simple and yummy. Can't wait to try them!

  4. How do you think they would hold up if you freeze them after baking? I need an alternative to Tyson nuggets!

  8. Christie, when I make baked chicken strips, I lay a metal cookie cooling rack within my cookie sheet I bake on. I put the chicken on the cooling rack, raised off the cookie sheet.n then it doesn't bake inits own juice, and stays crispy on the bottom!

  9. Hi I was just wondering what if we don't have Bisquick ?? Can we use Betty Crocker pancake mix instead ?? Would it matter. And I don't actually hve parmesan cheese to shred just the normal parmesan you put on pizza or spaghetti. Can I use that ?? PLEASE HELP. Just trying to make do with what I have. Got a 2 month old and can't run to the store. Please LMK thank you !!!!

    I am not 100% sure how the pancake mix would work for these, but I don't see any harm in trying it out and sure you can use that shaker can of parmesan instead of shredded. Let me know how it goes! :)

  15. I've tried several different oven fried chicken recipes, and they all turned out soggy. This is the first one that baked up crispy with a crust very close to fried chicken. I used regular Bisquick, and sprayed them liberally with cooking spray. Thanks for sharing this!
